Impromptu Colcannon



To use up the last of the spinach pancakes this evening, I decided to also use up some of the remaining kale and other vegetables lying about by making some colcannon. I also kind of wanted an excuse to have a go on my new Smasher by Joseph & Joseph! It's not as easy to use as I had hoped - it takes a lot more effort than I was really hoping for at first but once you've done the first 2-3 pumps of it, it gets much easier - I think I need to try it on a larger volume of potato as this was a very small batch.

Impromptu Colcannon
(Serves 1)
6 Anya potatoes, cut into chunks.
1 echalion shallot, peeled and cut into rings.
1 sweet potato, peeled and cut into chunks.
1 clove of garlic, peeled.
2 handfuls of curly kale.
About 50mL 1% fat milk (I used UHT, as always)
About 50g soft cheese with garlic and herbs.

Put about 1,000mL water in a large pan and bring to the boil with the addition of a pinch of salt. Add the potatoes, shallot, sweet potato, garlic and kale and boil for about 10 minutes, or until the potatoes are tender. Strain and mash the vegetables with the cheese and milk and then whip into a cohesive mass using a spoon.
